Ingredients

For the Slaw:


  • ½ head small green cabbage sliced into thin ribbons

  • 6 stalks Tuscan/Lacinato kale rib removed and sliced into thin ribbons

  • 1 ½ red bell peppers thinly sliced

  • ½ green pepper thinly sliced

  • 1 gala apple or fuji, grated with the peel on

  • ¼ cup Vidalia onion sliced paper thin

  • 2 Avocados

  • ½ cup Blueberries

  • ½ cup feta cheese

For the Dressing:


  • ½ cup champagne vinegar

  • ¼ cup olive oil

  • 2 teaspoons Dijon mustard

  • 2 tablespoons honey more to taste

  • 2 teaspoons garlic chopped

  • salt

  • pepper

Instructions

  • Add all the dressing ingredients into a jar or bottle with a tight-fitting lid. Secure the lid and shake vigorously until all ingredients are well combined and the dressing is mixed. Taste and adjust seasoning (honey, salt, or pepper) as needed.
  • To make prep incredibly fast and ensure uniform slices, I highly recommend using a mandoline to slice most of your vegetables (cabbage, peppers, onion). For the kale, remove the tough ribs and then thinly slice the leaves into ribbons. Grate the apple with the peel on.
  • Combine all the prepared slaw ingredients (cabbage, kale, bell peppers, apple, onion, avocados, blueberries, feta) in an extra-large mixing bowl. Toss gently to ensure everything is well distributed. Pour a portion of the prepared dressing over the top and toss again until the slaw is glistening and evenly coated, but avoid leaving excess dressing pooling at the bottom of the bowl. You may not need all the dressing.
  • Serve immediately and enjoy this fresh, vibrant, and healthy salad!

Notes

If you are preparing this dish for guests, photographing it, or simply aim for perfection (high-five!), a little trick is to squeeze fresh lemon juice over the grated apple and sliced avocado immediately after preparation and before adding them to the salad. This prevents browning and keeps them looking vibrant.

A quick note about my light salad dressings: these dressings are intentionally light on oil and heavier on vinegar, which means they won’t maintain a thick emulsification like traditional vinaigrettes. There’s simply too much vinegar compared to oil, and not enough mustard or garlic to fully stabilize it. However, they will stay emulsified long enough to beautifully dress your salad and serve it. Just remember to shake the bottle vigorously right before each use – a gentle sway won’t quite do the trick!

This recipe generously serves 3-4 people as a satisfying main dish, or 6-8 people when served as a refreshing side dish.
