Soft Chewy Smores Crumble Bars

Ingredients 

 

For the Crumble Base & Topping:

  • 1 cup unsalted butter room temperature
  • 2 ¾ cups graham cracker crumbs
  • 2 tablespoons graham flour you can also use whole wheat flour or all-purpose
  • ¾ cup sugar
  • 1 large egg
  • ½ teaspoon baking powder
  • ¾ teaspoon kosher salt
  • ¾ teaspoon pure vanilla extract

For the Remaining Layers

  • 4.5 oz milk chocolate high quality, I use Ghirardelli
  • 2 tablespoons heavy cream
  • 6.5 oz jar of marshmallow fluff
  • ½ cup mini marshmallows or more to your taste

Instructions 

Make the Crumble Base & Topping:

  • Preheat the oven to 350°F (175°C) and line an 8” x 8” baking pan with parchment paper, allowing some overhang on the sides for easy removal later.
  • In a medium bowl, whisk together the graham cracker crumbs, graham flour (or your chosen alternative), salt, and baking powder. Set this dry mixture aside.
  • In the bowl of a stand mixer fitted with a paddle attachment, beat the room temperature unsalted butter and sugar together on medium-high speed until the mixture is light and fluffy, which should take approximately 2 minutes.
  • Reduce the mixer to medium speed. Add the large egg and continue mixing until it is fully incorporated, about another 2 minutes. Stir in the pure vanilla extract until just combined.
  • Lower the mixer speed to low. Gradually add the dry graham cracker mixture in several additions, scraping down the sides of the bowl with a spatula as needed to ensure everything is well combined into a crumbly dough.
  • Scoop about 2/3 of this crumble mixture into your prepared baking pan. Using an offset spatula or the back of a spoon, press and spread it out evenly to form the base of your bars. Bake this base in the preheated oven for 15 minutes, or until the edges are lightly set and the top just begins to turn a golden brown. Cover the remaining 1/3 of the crumble mixture and refrigerate it until you are ready to use it for the topping.
  • Remove the baked base from the oven and allow it to cool completely in the pan while you prepare your ganache and other fillings.

Prepare Milk Chocolate Ganache:

  • Combine the milk chocolate (chopped or chips) and heavy cream in a microwave-safe bowl. Microwave on 50% power in 20-second intervals, stirring thoroughly between each interval, until the chocolate is completely melted and the mixture is smooth and glossy. Be careful not to overheat. Let the ganache cool slightly to thicken to a spreadable consistency before using.

Assemble your bars:

  • Once the crumble base is cool, carefully spread the marshmallow fluff over it using an offset spatula. For easier spreading and minimal mess, you can lightly coat your spatula in butter or warm it slightly under hot water before tackling the sticky fluff.
  • Rinse and dry your spatula, then pour the slightly thickened milk chocolate ganache over the marshmallow fluff layer. Gently spread it evenly across the entire surface.
  • Retrieve the remaining graham cracker crumble topping from the refrigerator. Evenly crumble it over the top of the ganache in small, delightful bits. Then, sprinkle your desired amount of mini marshmallows over the crumble topping.
  • Return the pan to the preheated oven and bake for another 20-30 minutes, or until the crumble topping is golden brown and the mini marshmallows on top are lightly toasted and puffed.
  • This is perhaps the hardest step: allow the S’mores crumble bars to cool completely in the pan before attempting to cut and serve them. This patience is crucial to ensure the gooey layers set properly and you get clean, beautiful slices. If you cut them while warm, it will indeed be a delicious but messy adventure!
