  • 2 cups all-purpose flour
  • 2 cups finely chopped walnuts toasted and divided
  • 2 teaspoons ground cardamom
  • ¾ teaspoon salt
  • 1 cup unsalted butter softened
  • ½ cup granulated sugar
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups powdered sugar for coating

Instructions 

  • Preheat your oven to 325F (160C). Line two large baking sheets with parchment paper to prevent sticking and ensure even baking.
  • In a food processor, pulse half of the walnuts until they are finely chopped but still have some texture; remove and set aside. Add the remaining walnuts to the food processor and pulse until they are very finely ground, almost like a coarse meal (ensure no large pieces remain). This variation in texture adds complexity to the cookies.
  • In a medium bowl, combine the all-purpose flour, both batches of chopped and ground walnuts, ground cardamom, and salt. Whisk these dry ingredients thoroughly to ensure the cardamom and salt are evenly distributed throughout the flour mixture.
  • In a large mixing bowl, cream the softened unsalted butter and granulated sugar together using an electric mixer until the mixture is light, pale, and fluffy. Remember to scrape down the sides of the bowl as needed to incorporate all ingredients evenly. Beat in the vanilla extract until it’s well combined, infusing the butter mixture with its delightful aroma. Gradually add all of the prepared flour mixture to the wet ingredients. Mix on low speed just until the dough comes together and no streaks of dry flour remain. Be careful not to overmix, as this can lead to tough cookies.
  • I find that a tablespoon cookie scoop works perfectly for portioning the dough. Scoop the dough, then gently roll each portion between your palms to form smooth, uniform balls. Place them on the prepared baking sheets, leaving a little space between each cookie.
