Ingredients

Beet Crust:



  • 1 cup roasted and pureed beets I roasted 2 beets at 400 for 45 minutes



  • ¾ cup almond meal



  • cup whole wheat flour (For a strictly gluten-free crust, substitute with a certified gluten-free all-purpose flour blend)



  • ½ tsp salt



  • 2 tsps baking powder



  • 1 tbsp melted coconut oil



  • 1 egg



  • 1 teaspoon vanilla



  • 1 teaspoon cane sugar

Toppings:



  • 1 ½ cups Chocolate chips



  • 1 ½ cups Peanut butter chips



  • Coconut cream or whipped cream or ice cream or frozen yogurt

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large bowl, mix all the beet crust ingredients thoroughly until well combined and a dough forms. Press the dough evenly onto a greased or parchment-lined pizza pan. Bake for 25-28 minutes, or until the crust is set and lightly golden at the edges. Let the crust cool completely to room temperature.
  • Once cooled, spread your choice of coconut cream or whipped cream over the crust. Sprinkle with ½ cup of chocolate chips and ½ cup of peanut butter chips. Melt the remaining 1 cup of chocolate chips in a microwave-safe bowl (in 30-second intervals, stirring in between) or a double boiler, then drizzle generously over the pizza. Repeat this process with the remaining 1 cup of peanut butter chips. Serve immediately and enjoy!
